UPDATE :

I would like to declare my state of gender fluidity from now on, and by that I mean Gender 'on' and gender 'off'. As of today I identity as an agender (TAKE NOTE : NOT NEUTROIS), however in the future I may choose to temporarily adopt a gender, maybe even TWO (a bigender, so I can be both male and the female at the same time!)

But as of today I am an agender, with no identification to any of these repressive labels/pronouns set by our PATRIARCHAL society by white cis males !

TAKE NOTE : In the future, It is your responsibility to check with me beforehand what gender I deem myself on the day before you apply your pronouns in reference to me, failure to do so is OFFENSIVE to my identity, and means YOU ARE A BIGOT.

Snails only have one Gender.

I'm not convinced by the idea that gender is "Whatever you think your gender is, that is it". If your "gender" doesn't correspond to something in reality, I would argue that it doesn't actually matter what you think, as a gender does not solely describe a state of mind.

For example, If I was Gender "Elephant". I could draw a mars symbol with an elephant snout sticking out of it and proclaim my new gender to the world.

However, unless I am actually an elephant (Newsflash, I'm not), The idea that my gender is "Elephant" has little merit, regardless of my state of mind. If I were to argue that I was Gender "Male", this idea actually corresponds to a biological trait of my body, which I won't specify, as I'm sure everyone is familiar with what trait I'm referring to.

The point is, Your state of mind and your gender are not the same thing. Of course there are thousands of states of mind. Gender means something else as well, which in my opinion is that your state of mind corresponds to reality.

I mean, that's just what you think of "gender". "Genderfluid", for example, is not something that is truly "real", but it's a gender of kinds. You could be a woman gender with a man sex.

What I'm trying to say is that if you don't have any actual biological reason for saying that you are something, then your statement is pretty meaningless. Sure, I can claim that I'm a woman all I want, but given that I am not actually a female biologically, and the accepted definition of "woman" entails being a female, My "Gender" Is nothing more than an idea. In addition to this, It is a perfectly reasonable assumption for another person to make that I am a man, given that I am male, and being male is also entailed in the word "man".

Well, yeah, most of the time, they're usually precisely the same. I agree, though, with the list of what you have said (but in some beasts, it's kind of harder to class. For example, some sea sponges basically fence with you can guess what, and whoever gets hit gets pregnant, and is the woman (psychologically? barely applicable word), and the other is the man.
