It would be nice to be able to see the total production of your mines summed up in the mine menu.

The second suggestion may be the way it is by design, but it would be nice to be able to see what a mine produces before you take the territory. You are able to see what recipes make before you take a territory so I figured this would make sense too.

Also, is there a way to inspect a territory without capturing it if you have enough troops? Sometimes I want to see what bonuses it is in or what recipe it gives me before taking it.

It's convoluted, but there is. Click a territory next to it, click connections and view it from there.

It would also be really nice to be able to see what an upgraded mine will produce before you upgrade it. Right now there's no real way to know how long it will take you to recoup your upgrade investment until you do it.

Oh yeah I forgot to mention that. Same goes for army camp upgrades.
