Why doesn't UJS have the ability to allow you to look at your territories and how many you have?

Click the magnifying glass in the upper left corner.

I think what you are looking for is highlighting the territories that you own?
Click Game > Statistics > Magnifying Glass
That page will also show how many territories and armies you have on the board
