How do I save a Multiplayer Scenario so that I can play it in Single-Player Mode?
(And if you have time, why do I need to "convert" a Multiplayer Scenario into a Single-Player Mode option to begin with? :P Should be like a checkbox confirmation... not a whole big deal... :P )

It's pretty easy - just go to singleplayer, load template, and pick out the Multiplayer templates.
