Need for Speed Underground 1,2 and Most Wanted deserve an honorable mention
Also there is a plethora of mostly rpg games with great OST. Aside from the more known like Skyrim or Mass Effect 1-3, I'd mention Gothic 3, Spellforce and TES IV Oblivion.
If you are less into grand instrumental compositions and more into metal or hard rock, charachter-action games' OST should be your pick, Prince of Persia Warrior Within, DMC III/IV and Bloodborne are just very good examples.
Also there are a lot of smaller productions, very often indie games, with fun, upbeat and goofy soundtracks, Super Meat Boy comes to mind.
