I'm German, Norwegian, Welsh, French, and English.
To the who European-European thing, that's overthinking it.
You would do the "African/European/Latin/Asian-American" thing to indicate immigration to the US from one of the said ethnic groups.
If I were to move from Wisconsin to Wales, I'd be Welsh-American or American-Welsh. Someone born in Wales would simply be Welsh. This applies to all moving from one nation to another. Say Ivan from Russia moves to Poland, he'd be Russian-Polish.
Sounds weird as hell, but what ever.

This is something silly that chiefly Americans do. Folk are rarely polyethnic. Duoethnicism is common enough, but you don't find more than that. You're probably just solely English ethnic.
You're not multiple ethnicities. You may have roots from multiple ethnicities, but you are most likely ultimately one ethnicity.
