I have beaten all the regular levels once, but I haven’t ascended yet, but I noticed there are rewards for beating the regular levels again, such as +30% production to a specific ore.

My question is: after ascending, do you still receive these ore bonuses for beating those levels? Or do you need to get those before ascending, if you want them?

you can (and probably should) get those after ascending.

You can get those at any time regardless of how often you ascended. You will, however, lose them all when you super-ascend. But then again, you can earn them all anew.
