I can work out how to take a game that I have played with someone else and start a new game with it by changing the players
But how do I take a game I have already played and make changes and save it

Save it as a template. That way you can create games with those exact settings anytime you want. You also can name templates and even nominate them as QM templates!

Game settings - Full Settings - Scroll up to Template Used
Click and copy template
Then save template
