It depends on what kind of video though. There are let`s plays of MineCraft, which are purely for amusement. I assume there are also videos for certain builds or epic builds and probably for those who are just a little to much into the game and want to know more details. It`s for the same reason people watch other videos. Either to be amused or get information on the topic.
Although I think your question accually is "Why do people STILL love to watch minecraft-videos". It gets old but MineCraft does offer quite a lot of variation, much like Gmod for example, so you`ll not get a bored as watching CoD or something that stays the same
